The vibrant flavours and aromatic spices of Indian cuisine are a global favourite. But with such an abundance of deliciousness, it's easy to generate food waste in the kitchen. The good news is that traditional Indian cooking has always had sustainability at its heart — from nose-to-tail use of ingredients to preserving seasonal produce.

Plan Before You Shop

One of the simplest ways to reduce waste is planning your meals for the week before heading to the store. Indian cooking often uses overlapping ingredients — onions, tomatoes, ginger, garlic, coriander — so buying in bulk and using across multiple meals makes both economic and environmental sense.

Use Every Part

Vegetable peels, stems and leaves that might otherwise be discarded are valuable in Indian cooking. Cauliflower leaves make excellent sabzi. Coriander stems carry as much flavour as the leaves. Onion skins add depth to stocks and gravies.

Preserve and Pickle

India has a rich tradition of preserving foods — achaar (pickles), chutneys, murabba (preserves) and fermented foods like idli batter. These techniques extend the life of seasonal produce and reduce waste significantly.

Spice Smart

Buy whole spices rather than pre-ground where possible. They last significantly longer, and you can grind only what you need. Store them in airtight containers away from heat and light.
